Sweet Heat is made using old-school lacto-fermentation methods discovered thousands of years ago to preserve goods.
Our hand-selected chiles are picked over to choose the perfect fruit (yes, chiles are fruits), then they are fermented in small batches with salt, spring water, roasted anchos (dried poblano chiles) hand-toasted spices and other all natural ingredients.
When perfectly fermented, these wonderful beauties are blended by hand with additional spices, fruits (sometimes), premium liquors and liqueurs, and raw, unfiltered honey or real maple syrup.
The result is an umami-packed hot sauce, filled with just the right blend of flavor and heat that you will find nowhere else.

A word on our use of premium liquors in our hot sauces - Most hot sauces are finished with vinegars to bring the ph level down for shelf-stable results. We feel that this addition of acid adds flavors that mask the potential greatness the chiles have to offer.
Instead, we choose to use premium liquors, like bourbon, scotch, rum and others as our method of stabilizing our fermented creations. Because of the nature of hot sauces, the finished product is not concidered to be an alcoholic beverage by federal regulations.
